Step 1: Cook the Potatoes and Aromatics
In a large skillet, heat the olive oil over medium-high heat. Add the cubed potatoes and fry for about 10 minutes, stirring occasionally, until they are golden and crispy. Add in the diced onion and garlic, reduce the heat slightly, and cook for another 5 minutes. Once everything is soft and fragrant, drain the oil from the skillet to avoid excess greasiness.

Step 2: Add Meats and Combine
Return the skillet to the heat and add the diced chorizo and Jamón Serrano. Cook lightly for a few minutes until the chorizo starts to release its flavorful oils. Then, return the potatoes, onion, and garlic back into the skillet.

Transfer the mixture to an ovenproof dish or divide into small ramekins. Gently crack your free-range eggs over the top, spacing them evenly. Place in a preheated oven at 180°C (356°F) for 2–3 minutes, or until the egg whites have just set but the yolks remain soft and runny.

Step 5: Garnish and Serve
Sprinkle with fresh parsley and serve immediately with some crusty Spanish bread on the side for dipping.
